Waygu and Wine – an irresistible pairing for both oenophiles and gourmand foodies. September 14th to November 22nd, the Capital Grille is hosting their annual Wagyu & Wine event, at The Capital Grille’s lounge. The exceptionally talented photographer Bokeh Studio joined me to taste and capture this indulgent evening.
For $25, guests can choose from two different styles of Wagyu burgers, accompanied by their choice of a glass of two exceptional wines typically reserved for bottle purchases only – Justin Isosceles Cabernet Sauvignon, Paso Robles, 2012 and Landmark Overlook Pinot Noir, California, 2013.
“Wagyu beef is often referred to as ‘butter knife beef’ because it is arguably the most tender beef on earth,” said The Capital Grille’s Executive Chef Michael LaDuke. “With Wagyu & Wine, we are putting our own twist on the comfort of a burger guests love, further enhanced with premium ingredients and flawless preparation.”
“Wagyu & Wine is also a wonderful opportunity for guests to enjoy one of two exceptional wine pairings with a gourmet burger,” added George Miliotes. Meticulously pairing by MS Miliotes, who takes great pride in coupling world-class wines with fantastic dishes.
Gorgonzola and Black Truffle Wagyu Burger – 8 oz Wagyu burger topped with gorgonzola black truffle butter and balsamic onions. “When selecting a wine to pair with our we factored in the need for powerful tannins to offset the richness of the meat, which is how we came to choose the 2012 Justin Isosceles Cabernet Sauvignon,” Miliotes explained.
The 2012 Justin showcased concentrated aromas of black fruits with classic baking spices, full-bodied with dark chocolate and coffee on the palate with a lingering finish which paired brilliantly with the rich blue cheese and waygu burger.
“As for our Wagyu Cheeseburger with Fried Egg, it made perfect sense to match the texture of the egg yolk to the silky smooth 2013 Landmark Overlook Pinot Noir.” Fried egg is like sunshine, always a winner especially on a beautifully crafted burger. The 2013 PN, a medium-bodied PN, fresh aromas of red fruit showcased bright acidity and soft integrated tannins.

We also got treated to the delicious in-house hand pulled mozzarella dish and an extra sweet finale with champagne and dessert. How cool is the Chocolate Stamped Capital Grille logo?
Prosciutto Wrapped Mozzarella with Vine Ripe Tomatoes, lightly sautéed and served with crisp crostini and 15-year aged balsamic.
