Recently I had the pleasure of getting a sneak peek (and taste!) of Appetite for the Arches. Some of my favorite local chefs Chefs Julie and James Petrakis of The Ravenous Pig and Cask & Larder, Chef Kevin Fonzo of K Restaurant, and Chef Kathleen Blake of The Rusty Spoon prepared dishes using McDonald’s ingredients including cocktails.
Here are some fine examples of the creativity of these brilliant chefs. I can’t wait to see what other mouthwatering dishes will be presented with humble ingredients at the event on March 1st.
Chef Kathleen Blake created Charmoula Chicken, Salt and Vinegar Potato Crisp, & Pickled Red Onions from Mcdonald’s chicken breast, hash brown, and red onions. It was the perfect bite!
Chef Kevin made Chipotle BBQ Beef Enchilada, Caramelized Onions, & Southwestern Veggie Salad using McDonald’s® Ingredients: Steak, Tortillas, Iceberg Lettuce, Southwest Veggies, Cherry Tomatoes, White Onions, Cheese, Chipotle BBQ Sauce. Sweet & Spicy – this enchilada will surely warm your soul!
The ingenious Chef James Petrakis pièce de résistance was Brandade Fritter with Smoked Tomato Bolognese from McDonald’s® Ingredients: Fish filets, Hamburger, Pork Sausage, Bacon, & Cherry Tomatoes. The vibrancy of the smoked tomato sauce combined with warm fritter was a match made in foodie haven!
And for the sweet finale, Chef Julie Petrakis indulged us with a Caramel Apple Bread Pudding, Oatmeal Raisin Streusel, &Vanilla Ice Cream. McDonald’s® Ingredients: Cinnamelts, Oatmeal Raisin Cookies, Apple Slices, Lemon, Milk, Eggs, Caramel Sauce, & Vanilla Ice Cream. On this crisp winter evening, it was the star of the show!!
Joining these illustrious Orlando Chefs are some of CFL’s fine dining restaurants including Blue Bird Bake Shop, Citrus, Cuisinier’s Catering, Eddie V’s, Luma on Park, SeaWorld Orlando, The Coop, The Ritz-Carlton, and Yardbird.
