On Saturday, March 7, the Orlando World Center Marriott, once again will host top local chefs from acclaimed restaurants and resorts to showcase their creativity to help raise funds at Ronald McDonald House Charities of Central Florida’s Appetite for the Arches benefit. A culinary event with a twist — Chefs will use fresh McDonald’s ingredients to create one-of-a-kind signature dishes. Guests will have the opportunity to interact with participating chefs while sampling the gourmet creations at this free-flowing event.
I attended this smashing event last year too and one thing I can tell you, is that nothing prepares you for the delightful dishes these talented chefs created from a few simple ingredients. “Appetite for the Arches unites Central Florida’s best chefs and the community on a night of culinary surprises and delight for a special cause. All proceeds from the gala help Ronald McDonald House keep families together when they need it most —during the treatment of a critically ill child.” Take a look of my recap HERE.
Chefs Julie and James Petrakis of The Ravenous Pig and Cask & Larder, generously hosted a sneak preview at their restaurant The Ravenous Pig showcasing their signature dishes prepared using McDonald ingredients. Joining them were Chef Kevin Fonzo of K Restaurant, and Chef John Rivers of Four Rivers Smokehouse.
Here are some delightful examples of the creativity of these brilliant chefs. I can’t wait to see what other mouthwatering dishes will be presented with such humble ingredients at the event on March 7th.

The ingenious Chef James Petrakis pièce de résistance – Chicken Terrine, Bacon Jam, Pickled Apple using McDonald’s® Ingredients: Chicken breasts, white onion, bacon, apple juice, apple, brioche roll, balsamic vinaigrette. I have only one word for this dish – DECADENT!
Chef Kevin made Cola BBQ Meatballs, Smoked Meatball, Cola BBQ Sauce using McDonald’s® Ingredients: Steak, hamburger, bacon, pork sausage, white onion, tomato, ketchup, mustard, hamburger bun. Sweet & savory – this meatball just might challenge your grandmother’s recipe.
Chef John Rivers created Southern Chicken ‘N Biscuits, Crispy Fried Chicken, Buttermilk Biscuit, Bourbon Maple Syrup from Mcdonald’s chicken breast, maple syrup, and mayonnaise. Savory, crunchy, sweet, buttery – itt was the perfect bite!
And for the sweet finale, Chef Julie Petrakis seduced us with a Creamsicle Parfait, Vanilla Bean Yogurt Panna Cotta, Mandarin Compote, Granola. McDonald’s® Ingredients: Mandarin oranges, yogurt, granola, and vanilla crisp. Silky and refreshing, it was the star of the show!!
Signature Cocktails courtesy of Republic National and prepared by The Ravenous Pig. Old Fashioned, Four Roses Bourbon, Hazelnut Syrup, Lemon Bitters, Maraschino Cherries. McDonald’s® Ingredients: Hazelnut syrup and maraschino cherries. Vodka Lemonade on Tap, Russian Standard Vodka, Balsamic, Strawberry, Lemon, Sugar. McDonald’s® Ingredients: Strawberries, lemon, sugar, balsamic vinaigrette.
