I simply adore tasting or cocktail parties. I get to create new recipes while having fun with my food. Personally for me, good wine, some cheese, few appetizers, and scintillating company is the ideal recipe for a great party. Serving a few or a variety of finger food gives me the freedom to mingle with my guests who I most often miss spending time with when I host a formal or course meal. And the best part of having a cocktail party is that I get to pick my theme and let my creative side run wild.
Recently, I catered a private party where the only criteria was finger food. Even though it was a casual cocktail event, I still wanted to create an elegant ambiance to showcase my beautiful mini creations. One of the dishes I created was a Savory Caramelized Apple & Onion Tart with Fresh Herbs & Cheese. It is relatively easy on your wallet and easy to make, yet the delicate flavors will impress even your most formal event.
Give some tender love and time to your onions and they will transform into sweet deliciousness which complement the apples perfectly. I love caramelized onions on just about anything. I put them on my pizzas, burgers, sandwiches, and tarts.
Mini Apple & Onion Tartlets |
- 1 1/2 lb. yellow onions, thinly sliced
- 1 tsp. kosher salt, plus more, to taste
- 2 Tbs. unsalted butter
- 1 lb. tart apples, peeled and sliced 1/8 inch thick
- 1 tsp. sugar
- 2 oz. aged Gruyère cheese, coarsely grated
- 1 tsp. chopped fresh thyme
- Freshly ground pepper, to taste
- 1 recipe Pâte Brisée
- In a large fry pan over medium heat, warm olive oil. Add the onions, thyme, and 1 tsp. salt and cook, stirring occasionally, until the onions are golden brown, about 20 minutes.
- Preheat the oven for 400 degrees.
- In the same pan over medium heat, melt the butter. Add the apples and sugar and stir to coat the apples. Cook, stirring, until the apples are just starting to caramelize and have softened, about 10 minutes. Transfer to the bowl with the onions and sprinkle black pepper to taste.
- Roll the dough to 1/8 inch thickness, cut to desired shape, and press the dough into mini tart or quiche pans.
- Fill the tart with apple and onion mixture. Sprinkle the cheese divided equally and season with salt & pepper.
- Bake for 20 – 25 minutes till the cheese is sizzling and the crust is golden brown. Serve at room temperature.
If you are in a time crunch, feel free to substitute the Pâte Brisée for store brought puff pastry.
Apples can be substituted for pears.
Gruyere can be substituted for Comte or Blue Cheese.

These tarts look delicious! Finger food/cocktail parties are my absolute favorite, both b/c of the increased opportunity to mingle and the chance to try tons of different bites 🙂
